Welcome! My name is Pablo Aquije, and I’m a chef, blogger and writer. With 16 years of experience in the culinary industry, I’ve trained under some of the most respected chefs in the business. Before starting my own business, I worked at ON20, where I honed my skills in classic French cuisine with a hint of molecular gastronomy. I approach cooking with a focus on bold flavors, using avant garde techniques. My culinary influences come primarily from by background; Puerto Rico and Peru, and I’m always looking for new and creative ways to showcase the flavors and textures of different ingredients. My blog space is where I share my passion for cooking with others. You’ll find everything from quick and easy weeknight dinners to more complex recipes for special occasions. I also offer tips and techniques for home cooks, and explore different culinary topics that inspire me. My Pop-up restaurant concept is an opportunity for diners to experience the flavors and atmosphere of a unique dining experience. The mystery of where will the restaurant be located next is part of the thrill, as it adds exclusivity and a sense of uniqueness to the diners. Throughout the year I will be announcing such events along with the set menu that our team will be serving.
